For the past twelve years, I've handled purchasing and technical specification for building-product manufacturers. Some projects start with glass, some with waterproofing, some with foam. In every case, the same question comes up: why does the approved product cost more than a 'same thing' from another source? I used to answer by trying to get the lower number. Then I made enough mistakes to see what the lower number did not include.

This is not abstract. In the last decade, I've personally made or approved nine substitutions that looked reasonable in sample review and did not hold up in real conditions. For a shower niche, it's water damage in finished spaces. For cold foam, it's a batch of scrap. All of those costs are real, even if they don't appear on the first invoice.
